Fior di Latte vs Buffalo Mozzarella: What's the Difference, and What's on Our Pizza?
Fior di latte and buffalo mozzarella are two different cheeses, and we use both at Mangia. Here is the difference, and where to find each one on our menus.
What is fior di latte?
Fior di latte means "flower of milk". It is mozzarella made from cow's milk. Cow's milk has a lower fat content than buffalo milk, which gives fior di latte a milder flavour.
What is buffalo mozzarella?
Buffalo mozzarella (mozzarella di bufala) is made from the milk of water buffalo, which has a higher fat content than cow's milk. Mozzarella di Bufala Campana is a protected DOP cheese. Its production area covers parts of Campania, Lazio, Puglia and Molise, with its core in Campania.
