Order Now OnlineThe Margherita: The Truest Test of a Pizzeria
Every serious pizza lover knows the secret: to judge a pizzeria, order the Margherita. With only a handful of ingredients and nowhere to hide, the classic Margherita exposes everything — the quality of the dough, the tomatoes, the cheese, the skill of the pizzaiolo, and the heat of the oven. A great Margherita is the mark of a great kitchen. A mediocre one tells you everything you need to know.
So when people search for the best Margherita pizza Amsterdam has to offer, they're really asking a bigger question: who does the fundamentals right? At Mangia Pizza, the answer is written into every pie. Our Neapolitan Margherita in Amsterdam is built exactly the way it's made in Naples — San Marzano DOP tomatoes, fiordilatte di Agerola, fresh basil, a drizzle of extra virgin olive oil, baked in a wood-fired oven at over 370°C. Ranked #43 in The Best Pizza Awards and featured by iamsterdam, Mangia has the credentials to back up the claim.
What Goes Into the Best Margherita Pizza in Amsterdam
The magic of a great Margherita is that there's nowhere to hide. Every ingredient has to be exceptional. Here's what goes into ours:
🍅 San Marzano DOP Tomatoes
Grown in the volcanic soil near Vesuvius and DOP-certified, San Marzano tomatoes are sweeter and less acidic than ordinary tomatoes — the only tomato a true Neapolitan Margherita should use.
🧀 Fiordilatte di Agerola
A fresh cow's milk mozzarella from the Agerola hills above the Amalfi Coast. It melts beautifully without flooding the pizza — clean, milky and authentic. Or upgrade to Bufalo Mozzarella DOP.
🌿 Fresh Basil
Added with care so it keeps its fragrance and colour. Fresh basil is the third colour of the Margherita — the green in Italy's flag, alongside the red tomato and white cheese.
🫒 Extra Virgin Olive Oil
A final drizzle of quality EVO oil ties the whole pizza together — richness, aroma and that unmistakable Italian finish.
🌾 24–48 Hour Fermented Dough
Made with a custom Molini Pizzuti flour blend and fermented for one to two days — lighter, more digestible, with a soft, airy crust and the signature leopard-spotted char.
🔥 Wood-Fired at 370°C+
Baked for just 60–90 seconds in a real wood-fired oven. That intense heat is what gives an authentic Margherita its blistered, tender crust — impossible to replicate in an electric oven.
The Story of the Margherita
The Margherita is more than a pizza — it's a piece of Italian history. As the story goes, in 1889 the Neapolitan pizzaiolo Raffaele Esposito created a pizza in honour of Queen Margherita of Savoy, topped with tomato, mozzarella and basil to represent the red, white and green of the newly unified Italian flag. The queen loved it, and the Margherita was born.
More than a century later, the Margherita remains the benchmark against which all pizza is measured — so much so that the true Neapolitan version is protected by its own set of rules under the Associazione Verace Pizza Napoletana. At Mangia Pizza, founded by Antonio Cavuto from Naples, we honour that heritage in every pie. This is why our Margherita is regularly singled out as one of the best Margherita pizza Amsterdam has to offer — because we treat it with the respect a piece of Neapolitan history deserves.
