DOP (Denominazione di Origine Protetta) certifies that a product is grown, produced and processed in one specific region, using traditional methods — no shortcuts, no substitutes. IGP (Indicazione Geografica Protetta) is close behind it — at least one stage of production has to happen in a defined region. Both are EU-regulated. Neither is a label you can just print on a menu — it has to be earned, and verified.
Most pizza places use "San Marzano-style" tomatoes or "buffalo-style" mozzarella. At Mangia Pizza, founded by Antonio Cavoto from Naples, the actual certified ingredients go into the dough, the sauce and the toppings — not the closest cheap substitute.

Made in the mountain town of Agerola, near Naples — a fresh, milky mozzarella that melts differently to the mass-produced version most places use.
🥓 Mortadella di Bologna IGP
The real thing, made in and around Bologna under strict IGP rules — not the supermarket cold cut sold under the same name elsewhere.
🧈 Bufala Mozzarella DOP
Real buffalo milk mozzarella, DOP-certified — richer and tangier than the cow's-milk version most pizzerias substitute in.
Why It Actually Changes the Pizza
Certified ingredients aren't a nice-to-have — they change how the food tastes and behaves. San Marzano DOP tomatoes hold their shape and sweetness under high heat instead of turning watery. Fiordilatte di Agerola melts smoother, without the greasy pool a cheaper mozzarella leaves behind. It's the difference between a pizza that photographs well and one that's actually good.
The dough itself uses a custom flour blend from Molini Pizzuti, fermented 24–48 hours for a lighter, more digestible crust — another detail that doesn't show up on a menu description but shows up on the plate.
