Focaccia is one of Italy's most ancient breads, with roots stretching back to the Romans and possibly earlier. Its name comes from the Latin panis focacius — "hearth bread" — a flatbread baked in the ashes of the hearth. Over the centuries it became especially associated with Liguria, the coastal region around Genoa, where focaccia genovese — dimpled, olive-oil-rich and lightly salted — remains a daily staple eaten at all hours.
